Wilo Benet of Puerto Rico said he thought it would be whichever country or area had a signature dish that caught on. He cited the growing popularity of ceviche, which originated in Peru.
He would like his own country to make its mark, but he admitted that he’s still trying to figure out which dish would have capture the market’s fancy.

Wilo Benet, owner of Pikayo and Patá restaurants in San Juan, Puerto Rico, and a contestant this summer on Bravo TV’s ”Top Chef Masters,” appreciates how far U.S. diners have come in embracing the bright, bold flavors of Latin American cuisines.
“We have an hors d’oeuvre [at Pikayo] of tuna tartare stuffed with chipotle-chile mayonnaise,” he said. “I would not have even thought about serving that 10 years ago.”
